2007 Napa Valley Petite Sirah
Our limited production 2007 Aquinas Petite Sirah is a deep, inky purple color, and begins with complex aromas of sandlewood and cherry, with background notes of lilac and lavender. The aromas seem to jump out of the glass, but with depth and weight. Much like the nose on this wine, the flavors unravel in layers, with cassis and deep, integrated oak followed by savory herbs and an elusive dark, earthy, mineral character. Contrasting with its full, round body and velvety tannins, this vintage finishes with mouthwatering acidity. This is a Petite Sirah made in a serious wine-drinker’s style; the savory, herbal flavors are dark, enticing, and off of the beaten path.
Wild game and red meat will both pair easily with this wine. Try a hearty Borscht Soup—this classic Russian comfort food will match nicely with this Petite Sirah. Roasted, caramelized dishes will pair nicely as well, such as slow roasted winter vegetables, like carrots and parsnips with olive oil and herbs.
Don Sebastiani Sr. learned about St. Thomas Aquinas in his studies and travels, and was inspired by the way that he brought together two dissident ideas, using scientific method to try to prove the existence of a “higher being.” In much the same way, Don knew it was possible to bring together the idea of a classic, excellent Napa Valley wine with affordability and accessibility that most Napa wines lack. Wine should be a luxury that we can all afford, and the famed Napa Valley is no exception.
